It’s always rush rush rush when back home. I am sure many other expats feel the same way. You try and jam-in as much as possible. When returning for a wedding over a weekend there is even less time. Therefore, it is important to maximise the time you do have. Last weekend, for us, that was a short turn around from 2pm to 4pm on Sunday and of course, being British and at home in the U.K. that could only mean one thing – a Sunday Roast.
Seeing as it was a beautiful summers day, we decided to make a Summer Sunday Roast.
Entrées of cantaloupe melon wrapped in parma ham and mozzarella with cherry tomatoes and basil. The divine mozza-balls come pre-scooped from Marks & Spencer (the U.K. stronghold).
Followed by chicken and roasted summer vegetables. Super simple, you chop up all your summer veg such as courgettes, peppers, tomatoes and red onion with a little garlic, olive oil (or coconut oil) some lovely chicken breasts (seasoned) and roast. Depending on your oven this should take about 25 mins.
Garnish with fresh mint and serve with couscous (*so nice they named it twice*).
